Easy Egg Appetizer Recipes For Summer Picnics

When it comes to summer barbecues and family picnics, we always look forward to eating some delicious appetizers made from eggs.

Before we get to the recipes, I would like to share some helpful tips with you to make your preparation easier.

Eggs are easier to peel if you rinse them under cold running water for 15 minutes before peeling. Store them in their original cartons in the coldest section of your refrigerator. Check carton for the expiration date and toss any eggs that smell badly after being cracked.

Pickled Eggs - I recommend purchasing a plastic container that is specifically made for pickled eggs. This container will have an easy lift-up insert so that the beet juice drains away from the eggs and beets. These type of containers are airtight to prevent spillage during transport. You will want to refrigerate them for 6-8 hours before serving. This allows the juice to pickle your eggs.

Deviled Eggs - You can mash the yolks with a fork but if you want a really creamy filling, use a food processor or blender. To keep them from sliding around during transport, buy a specifically made deviled egg container. It will have oval shaped cavities to keep them sorted and stable during transport. Refrigerate for 2 hours before serving.

Here are my family’s favorite recipes.

Pickled Red Beet Eggs

2 cans of sliced red beets

24 hard-boiled eggs

1 cup granulated sugar

1/2 cup wine vinegar

1 cup of water

1 teaspoon salt

In a large saucepan, combine granulated sugar, wine vinegar, water and salt. Bring to a rapid boil and boil for 5 minutes. Drain red beet juice into the saucepan (keep beets in can) and boil for an additional 2 minutes. Put shelled eggs in a deli container and pour juice mixture over top. Stir. Pour sliced beets into container and stir again. Let cool for 15 minutes and then seal container, then refrigerate.

Deviled Eggs

1 dozen hard-boiled eggs

1/4 cup sweet relish

1 tablespoon mustard

3 tablespoons salad dressing

2 teaspoons salt

1 teaspoon granulated sugar

paprika

Slice hard-boiled eggs in half length-wise. Remove yolks and place in a small bowl. Mash yolks with a fork or blend lightly in a blender. Mixed yolks with: sweet relish, mustard, salad dressing, salt and sugar. Mixture should be of a creamy consistency. Spread mixture into the empty cavity of each egg. Sprinkle paprika on top, then refrigerate.

Finding Quick And Easy Recipes

Have you done a search for a quick and easy dinner recipe lately? I ask because I noticed something interesting the other day when I did a Google search for a quick and easy recipe for dinner this past weekend.The thing about that search that struck me as funny was the fact that all I had to search for was quick and easy, I did not have to mention what was quick and easy that I was looking for. No mention of dinner, appetizers, meals or another one hundred ways to cook a chicken nothing no mention of food or cooking what so ever.

I suppose it struck me as funny because I could think of quite a few things that I would look for that were quick and easy and none of them involve food. Yet when I tried to search just on quick and easy for all three major search engines they all assumed that I was looking for quick and easy recipes. Yes it’s true that quick and easy recipes is exactly what I was looking for and for the most part they all gave basically the same food sites to find quick and easy recipes.

Just got me thinking how often people around the world must be looking for quick and easy recipes that all I have to type now is quick and easy. I did find a delicious recipe for a chicken and pasta dinner with diced red peppers and yes it was quick and easy! This also got me to thinking about how the concept of spending a decent amount of time to cook a good meal with more than five ingredients has become a lost art form really. Some of the most popular cooking shows on the Food Network for example are all about limiting your ingredients and preparing your meals in thirty minutes or less.

I reflect on the cooking habits that go on in our house and I would have to say that the only time we spend more than a half hour on any meal usually means we are cooking a holiday feast. Other wise I suppose we are like everyone else looking for short cuts to making our meals. This led me to another thought about all these quick and easy meals that perhaps all this short cut cooking that we all do and cutting back on ingredients is part of the reason so many people are fighting obesity and poor health. Not to say that quick and easy recipes are not healthy but that maybe they are missing some of the key ingredients and nutrients that we used to get in our daily nutrition but are now being shorted in the interest of saving time and money.

Quick and Easy Appetizer Recipes and All are Diabetic Friendly, too

Having a group of friends over and don’t want to spend a lot of time making appetizers or snacks?  Here are some quick and easy recipes for you.  Choices include Ham and Cheese Roll with the unusual ingredient of Dr. Pepper.  Quick and Easy Onion Cheese Dip has only 4 ingredients and needs to chill for an hour.  Both of those recipes are great “make-ahead” party foods.  The Easy Tuna Spread gives your party food a different taste with this Tuna mixed with cream cheese and salsa, etc.

HAM AND CHEESE ROLL

8 oz American Cheese, grated

8 oz cream cheese

dash hot sauce

dash of garlic powder

1/2 cup very finely chopped nuts

1 tbsp Dr. Pepper

2 small pkgs shaved ham slices (ie Buddig)

Lay ham slices out in a pattern overlapping each other. Mix the other ingredients together until well blended and put over the ham. Roll ham up to make a log. Cover with more ham if needed to be sure all cheese is covered. Refrigerate until serving time. Cut into thin slices and serve with assorted crackers or party breads.

QUICK AND EASY ONION CHEESE DIP

2 tubs (8-oz each) cream cheese spread

1 cup shredded cheddar cheese

1/2 cup chopped green onions

2 tbsp real bacon bits

Mix all the ingredients together until well blended. Spread mixture into an 8-inch pie plate. Cover and refrigerate at least one hour before serving. Serve with an assortment of crackers.

EASY TUNA SPREAD

1 pkg (8-oz) cream cheese, cut-up into pieces

3 tbsp medium hot salsa

1 tbsp dried parsley flakes

1 tsp dried minced onion

1 can (6 1/2-oz) can water packed tuna; drained and flaked

In a mixing bowl, combine the cream cheese, salsa, parsley, and onion. Mix the ingredients together until well blended. Fold in the tuna. Serve with whole-wheat crackers or party rye bread.

Hosting a fabulous party doesn’t have to be a stressful event. The key is planning and organization. Here’s an easy game plan for your next party.

First, determine how many people you will invite and how long the party will last.

Next, determine how much food you’ll need. As a rule of thumb, you will need three to four bites per person, per hour. For a small gathering, five to eight different appetizers will suffice. Allow for one to two drinks per hour, per guest.

Then plan your menu. Think about making a few “wow” appetizers and then rounding out the menu with some less labor-intensive dishes, such as a good store-bought cheese ball and crackers or a fruit or cheese platter. And remember, you don’t have to make everything from scratch. Take advantage of timesavers from your supermarket, such as sliced baguettes and pre-cut veggies.

You don’t have to have traditional serving platters to present your food attractively. Use your imagination-unusual small plates, decorative trays, cutting boards and baskets can all be used for serving.

Finally, don’t wear yourself out the day of the party; make what you can ahead of time so that you’ll be free to have as much fun as your guests.

Here are two simple appetizer recipes that your guests will rave about.

Spinach and Feta Pinwheels

1 sheet frozen puff pastry, thawed

1 (10 oz) bags frozen chopped spinach, thawed and well drained

1/2 cup roasted red peppers, drained and finely chopped

1 cup parmesan cheese, grated

1/2 cup feta cheese, crumbled

1/2 teaspoon salt

1/4 teaspoon pepper

1 egg

1 tablespoon water

Preheat oven to 400 degrees F.

In a large bowl, combine the spinach, roasted red peppers, and both cheeses. Season with salt and pepper.

On a lightly floured surface, roll puff pastry out to an 11-inch square.

Spread spinach mixture evenly over the puff pastry, leaving one inch of pastry uncovered at the far end. Press down evenly with fingers.

Starting on the near side, tightly roll up into a log. With a serrated knife, using a sawing motion, cut roll crosswise into 1/2 inch slices. Place slices on a baking sheet that has been lined with parchment paper or sprayed with non-stick spray.

In a small bowl, whisk together egg and one tablespoon water. Brush egg mixture lightly over slices.

Bake 20 to 25 minutes or until puffed and browned. Serve warm or at room temperature.

Makes 16 spirals

Make Ahead Tip: Combine spinach, peppers, and cheese. Store in a covered container in the refrigerator for up to 3 days.

Cocktail Meatballs & Spicy Cranberry Sauce

2 (32 oz) packages frozen cooked meatballs, thawed

1 cup smoky barbeque sauce

1 can cranberry sauce with whole berries

1/4 cup hot chili sauce*

1/4 cup orange juice

Cook the barbeque sauce, cranberries, chili sauce, and orange juice in a dutch oven or large stock pot over medium heat for five minutes, stirring to combine. Add meatballs, bring to a boil. Reduce heat to low and simmer for 25 minutes, stirring occasionally. Serve hot.

Makes 60 to 70 meatballs

Tip: The meatballs may also be prepared in a 350 degree oven for 25 minutes.

*Look for Sriracha in the Asian Foods section.

People tend to overeat because they are not eating nutritionally sound food and advertisements often influence those watching to make bad food choices. There’s time to reverse the bad trend of poor eating habits, generation of people have adopted. We need to STOP replacing home-cooked meals with fast foods. The crock pot has resurfaced and has become a huge time saver for the working class and busy homes alike.

We use to only use our crock pot on holidays. Know it’s found a new home on my counter. So weather its Easy fast dinner recipes or a quick easy appetizers, it’s there ready to go.
